Kyma sits on Palm West Beach, opposite the Fairmont The Palm, built around a Greek-inspired design of whitewashed arches, crochet loungers, and linen cabanas that step from the sand toward the promenade. It runs as both a daytime beach club and an evening restaurant, with an adults-only window from noon to 7 PM and open seating after that.
Corporate chef Gilles Bosquet's menu draws on Greek and Mediterranean cooking: tzatziki and taramosalata to start, truffle sea bass and prawns saganaki among the hot plates, chicken souvlaki and a whole grilled sea bass among the mains, and galaktompoureko for dessert. The bar leans on the same Greek pantry, from the Kyma Mule of Skinos Mastiha, basil, and ginger beer to a Santorini cocktail built on mastiha, blue liqueur, pineapple, and yuzu.
Seating runs from dining tables to private cabanas set into the sand and pool loungers upgradeable to a cabana package. Evenings bring resident DJ sets across the restaurant and beach as the day cools into night.
