Milos Dubai is the Estiatorio Milos that chef Costas Spiliadis has built inside Atlantis The Royal, on Crescent Road at Palm Jumeirah. Spiliadis opened the first Milos in Montreal in 1979; the group has since added rooms in New York, Athens, Las Vegas, Miami and London. The Dubai room sits beside the Skyblaze Fountain, the resort's fire-and-water display, with views running to the Arabian Gulf.
The dining room runs under six-meter ceilings finished in Greek marble, with floor-to-ceiling glass doors that slide back onto a central kitchen platform. Seating totals 220 indoors, plus three private dining rooms, one on the rooftop, and a terrace that catches the fountain show after dark. Near the entrance sits the iced fish market that defines every Milos room, where the catch is chosen before it goes to the grill or the salt crust.
The kitchen works from that display: whole fish is prepared raw as sashimi, ceviche or tartare, or cooked grilled, salt-crusted, fried or poached, with the salt-crusted fish cracked open and fileted at the table. The raw bar runs a sashimi plate of tuna, magiatiko and salmon alongside fresh lobster, finished with Aegean sea salt and Koroneiki olive oil.
Lunch and dinner run seven days a week, split between a midday sitting and an evening sitting past 11 pm. Dress follows the resort's smart elegant standard, and terrace tables timed to the fountain show are worth requesting ahead. Reservations run through the restaurant's own booking page.
