Estiatorio Milos moved into The Venetian in 2021, the Las Vegas home of the Greek seafood restaurant that first opened in Montreal in 1979. The room has a spacious main dining room, private dining rooms, a produce market and a yogurt room where Greek yogurt is strained through cheesecloth in the traditional way.
The meal starts at the fish market. Whole fish sit on ice, the selection is made fresh each morning, and the captain walks guests through the varieties and origins before they choose. Fish such as fagri, lavraki, lethrini and tsipoura is priced by the pound and served grilled or fried, and a raw bar adds whole-fish sashimi, crudo and tartare.
The Milos Special, the Greek salad with vine-ripe heirloom tomatoes, saganaki and the salt-baked fish anchor the classics, with baklava and galaktoboureko to finish and Greek wines on the list. Lunch runs 11:30 a.m. to 3 p.m., with a three-course menu, the bar and raw bar stay open from 3 to 5 p.m., and dinner runs until 11 p.m., or 11:30 p.m. on Friday and Saturday.
