Estiatorio Milos Midtown · Restaurant · New York

Whole fish bought by the pound and grilled plainly, on West 55th Street since 1997.
Estiatorio Milos opened on West 55th Street in 1997, the first time Costas Spiliadis had taken the restaurant beyond Montreal, and it arrived in a city that had not seen Greek food presented this way. The format has barely moved since. Fish is bought whole, priced by the pound and chosen from ice at the front of the room, then grilled and sent out with little more than olive oil, lemon and herbs.
The dining room is large, airy and high-ceilinged, with earthenware jars and urns set through it, and a later renovation opened a lower level that now takes private events. The olive oil and yogurt are imported from Greece and the vegetables are treated with the same restraint as the fish, which is the whole argument of the place: buy well, then do as little as possible.
Lunch and dinner run seven days, with lunch from 11:30 AM on weekdays and noon at weekends, and dinner to midnight Monday through Saturday and 11 PM on Sunday. The kitchen closes between the two services, so an afternoon table is not an option.
Milos now runs rooms in Las Vegas, Miami, London, Dubai and Los Cabos among others, but West 55th Street is the one that established it in the United States.
