What's Hot in Dubai for the 2026-27 Season
Dubai's season runs October to April. The rooms that opened since last season, what returns from a summer closure, and the tables that get hard to book once the calendar fills.
The season turns in October
Dubai runs on a calendar most cities do not have. From October through April the weather flips from survivable to perfect, the beach clubs come back from their summer pause, the events calendar fills, and the rooms that sat half-quiet through August start turning tables twice a night. That six-month window is the season, and it is when the city's best addresses are most in demand.
This is the shortlist for 2026-27: what opened since the last season, what is coming back from a summer closure, and which restaurants are in the highest demand once the season is busy. The newest rooms
Nobu at One Za'abeel
Dubai's second Nobu is the first anywhere built around a late-night program, layering a DJ-led bar and lounge onto the dinner service rather than closing the room when the kitchen slows. It sits inside One Za'abeel, the tower complex joined by the cantilevered Link. For anyone who knows the Atlantis room, this is a different proposition: the same kitchen language, a later finish. Siena
Siena opened in Gate Village in April 2026, the Dubai outpost of a concept that began in Paris, and gave DIFC an Italian dining room that runs from lunch through to a late bar service. The room is the draw: arched windows, deep red banquettes, and a bar that keeps going after the kitchen has done its work. See Siena.
Billionaire
Billionaire took the 61st floor of Mandarin Oriental Downtown in November 2025, a few weeks after the hotel itself opened. Dinner and a live show run together, and the room carries on as a late venue once the performance ends - the format that made the name, at the top of one of Downtown's newest towers. See Billionaire.
WooHoo
WooHoo opened in October 2025 around Aiman, an artificial intelligence chef developed by UAE studio Umai that generates recipe concepts the human kitchen then cooks and edits. It is the most genuinely novel opening of the last year, and the room - all curved metal and projection - is built to match the premise. See WooHoo.
The Cullinan
The Cullinan is the steakhouse on the first floor of Jumeirah Marsa Al Arab, the resort Jumeirah opened on its own peninsula off Umm Suqeim in March 2025. That peninsula now holds three of the strongest rooms on the stretch: the steakhouse itself, KIRA for Mediterranean and Japanese cooking, and the Greek beachfront room Iliana. See The Cullinan.
Felicità and Il Gattopardo
Two Italian arrivals worth knowing. Felicità works hand-painted tiles, sculptural detail and a terrace that opens onto the boulevard for aperitivo before service moves indoors. Il Gattopardo opened its Dubai room in December 2024 with Abruzzo-trained executive chef Massimo Pasquarelli in the kitchen, and a window table there faces the Burj Khalifa. Back for the season
Summer closes rooms in Dubai, and October brings them back. Three worth putting in the diary:
- Hakkasan returns on 23 September 2026 after a resort-wide seasonal pause at Atlantis, The Palm. See Hakkasan.
- Casa Amor at Mandarin Oriental Jumeira is closed for the summer and reconnects in October, pairing a daytime beach house with an evening restaurant built on live music and DJ sets. See Casa Amor.
- Kinugawa, the Dubai debut of the Japanese group that started in Paris, has been running a pool-and-lunch rhythm through the heat, with the restaurant returning in October. See Kinugawa.
Iliana's rooftop lounge above the restaurant also runs seasonally, so the October reopening is the start of its window rather than a return from repairs.
The beach-club season restarts
Beach and pool days are the clearest seasonal trade in the city: unbookable in August, the first thing to sell out in January. Four addresses joined our Dubai list for this season - SAN Beach on Palm West Beach, Ninive Beach on J1 Beach, the French Riviera-styled Maison de la Plage, and Casa Amor when it returns - alongside the established run of Nammos, Bâoli, Nikki Beach, Kyma and the rest. After dark
Two additions change the shape of the nightlife list. Billionaire is the big-format dinner-and-show room. Voyage by Amelia is the opposite: a small late room reached by its own elevator inside Amelia, running Thursday to Saturday from 11pm on deep house, with Unexpected Tuesdays from 11:30pm on hip-hop, R&B and Afrobeats. On the rooftops, 1920 took the 52nd floor of ICD Brookfield Place in DIFC, and Ling Ling runs levels 22 and 23 of Atlantis The Royal. Both sit in our rooftop bars guide.
The most sought-after tables
Once the season is busy, the same handful of dining rooms run out of weekend tables first. Tresind, in the MICHELIN Guide's Dubai selection, moved into the Arabian Court at One&Only Royal Mirage and runs a modernist take on Indian cooking. Krasota turns dinner into a scripted performance built around a single narrative, which caps how many people can sit in a night. Milos brings the Greek seafood counter that started in Montreal in 1979. Signor Sassi carries the name of the Knightsbridge original, and Bar des Prés sits high in a DIFC tower.
For rooms where the evening turns into something else, Aretha runs dinner shows at 8:30pm and 10:30pm before the room becomes a club with a live DJ after 11:45pm, and Netsu cooks over straw fire in the warayaki tradition. Where to start
Booking early is what makes the difference in season. Beach club weekends and the big nightlife rooms fill up from November, the week either side of New Year's Eve is the busiest of the year, and anything with a fixed show time - a dinner show, a single nightly seating, a rooftop with a sunset window - has fewer seats to give than a standard dining room.
