It opened in 2019 as chef Ross Shonhan's first restaurant in the UAE, built around warayaki, the Japanese straw-fire cooking technique that gives the room its name. Shonhan trained under Nobu Matsuhisa in London, ran the kitchen at Zuma, then opened his own London restaurants, including six Bone Daddies ramen bars, before bringing Netsu to Dubai.
The dining room centers on an open kitchen counter, where flames curve around the grill as the chef torches straw beneath the coals, visible from the sushi counter and the main room. A terrace opens for alfresco dining in the evening, alongside a bar and private dining areas.
The kitchen serves warayaki-style grills alongside sushi and sashimi platters. An Omakase menu, AED 650 per person for two or more guests, moves through a seasonal, chef-guided sequence built on that straw-fire technique. The wine list runs past 250 labels, paired with a Japanese-inflected cocktail list and a sake program from a dedicated sake sommelier, served in individual sake pots. Saturday brunch runs on dishes such as warayaki tuna tataki, Korean fried chicken, and Australian Wagyu ribeye, closing with a dessert platter.
Dinner runs nightly from 6:30 to 11:30 pm, with brunch on Saturdays from 12:30 to 3:30 pm. Reservations run through the restaurant's own SevenRooms page, and the Omakase seating is worth booking ahead.
