The dining room follows the group's house style: dark wood paneling and carved detail set against a red color palette, built around an integrated DJ booth. A resident DJ runs the room's soundtrack through service, and large windows face the lagoon side of the resort.
The kitchen works across Thai and Japanese registers, with dim sum and Japanese tempura alongside Thai curries and made-to-order sushi and nigiri. Signature dishes include the Tiger Tears, the Maya Crispy Duck and a seared nigiri selection, plus a pad thai and choices from the robata grill. A five-course Gokan tasting menu and a dedicated cocktail list sit alongside the a la carte menu, and a separate sunset menu runs daily from 4 to 8 p.m.
Main dining runs from noon to midnight Sunday through Wednesday and to 12:30 a.m. Thursday through Saturday, while the bar stays open until 3 a.m. every night. Weekend brunch is served Saturday and Sunday from 1 to 5 p.m. The dress code is elegant, and reservations for any service are made through MayaBay's own booking page.
