Maison Revka takes over a set of rooms in the five-star Delano Dubai on Bluewaters Island, its dining spaces built around a run of stained glass and plush seating that draw on early 20th-century Parisian design, with two sunlit verandas that look out over the pool and the Gulf.
The kitchen reads Slavic heritage through French technique, with caviar, grilled lobster and smoked salmon among the signature dishes, set alongside a raw bar built for sharing at the table. Vodka and a French-leaning wine list carry the drinks side of the room.
