Jose Andres' Spanish steakhouse, now at The Palazzo
Bazaar Meat by Jose Andres is at The Palazzo at The Venetian Resort, on the lower level just off the Palazzo lobby. After a decade at SAHARA, the restaurant moved to the center of the Strip and reopened here in September 2025, in a room inspired by the Feria de Jerez, the horse fair in southern Spain. A long corridor of dark lacquer and bull graphics leads into a dining room that looks straight into the open-fire kitchen.
The menu is built for sharing, with a little theater at the table. Cotton Candy Foie Gras and Caviar Cones are the signatures to start, followed by Live Scallop Ceviche, Josper Roasted Leeks and Beef Tenderloin Rossini. The steak to know is the Stemple Creek Black Angus Vaca Vieja, from older cattle with a deeper flavor. Dessert includes Sphere Graffiti, a chocolate dome cracked open at the table with a small mallet, a nod to the Sphere next door. The drinks follow the same idea: a Magic Mojito finished with cotton candy, a Nitro Caipirinha frozen at the table, and a martini service made to order.
For groups there are three private dining rooms and a separate event space, plus a covered terrace for dining outside year-round. A tapas kitchen serves the bar and lounge for a lighter night.
