Jose Andres doubled down at Palazzo, 20,000 square feet of fire.
Bazaar Meat by Jose Andres at SAHARA Las Vegas is Chef Jose Andres' carnivore-leaning Las Vegas flagship and one of the most consistently celebrated steakhouses on the Strip (a Forbes Five-Star, AAA Five-Diamond room that has held both ratings since 2017). The restaurant opened in 2014 in the property then known as SLS Las Vegas (rebranded to SAHARA in 2019) and remains the property's anchor fine-dining room. The format pairs traditional Spanish technique with American steakhouse cuts cooked over a custom open-fire kitchen at the center of the dining room.
The menu reads as a tasting journey rather than a steakhouse a la carte. Spherical Olives (the Adria-era molecular gastronomy signature, served on a spoon and meant to be eaten whole). Jamon Iberico de Bellota carved tableside. The Cotton Candy Foie Gras. The Roast Suckling Pig (the table-share showpiece, carved with a plate). The Australian Wagyu and the USDA Prime steaks cooked over the open-fire grill (the Tomahawk for tables of four or more is the celebration cut). The Whole Catalan Lobster. Steak Tartare prepared tableside.
The dining room is one of the most theatrical in Vegas. The open kitchen runs the full length of the back wall with the live-fire grills, the dry-aging room visible through glass, and the carving stations all in sight from the main floor. The bar program is an extension of the menu (a Gin and Tonic program with 30+ Spanish gins, a Sherry program rare on the Strip, a wine list that runs deep on Spanish Rioja and Priorat with French Burgundy parity). The room runs at a noise level designed for celebration without losing conversation.
