Beauty & Essex at The Cosmopolitan is the Vegas chapter of the New York original (the Chris Santos / Tao Group concept that opened on the Lower East Side in 2010). The Vegas room opened on the third floor of The Cosmopolitan in 2017 and the entry remains one of the most theatrical in the city: guests pass through an actual working pawn shop (Beauty & Essex Pawn) into the multi-room restaurant beyond. The hidden-entry conceit is genuine theater, but the restaurant is the actual draw.
The menu is shareable American small plates built for groups and the format works because almost every dish is calibrated to hit the table photo-ready.
