Beauty & Essex at The Cosmopolitan is the Las Vegas chapter of Chef Chris Santos' New York original, and his first restaurant outside New York City. The Vegas room opened in May 2016, and the entry is part of the show: guests walk through a pawn shop stocked with guitars, fine jewelry and vintage bags, every piece for sale, into the multi-room restaurant beyond. The hidden-entry conceit is genuine theater, but the restaurant is the actual draw.
The menu is shareable plates built for groups. Grilled Cheese and Tomato Soup Dumplings with smoked bacon. Tuna Poke Wonton Tacos. Chile Relleno Empanadas. Little French Dips and Roasted Bone Marrow. The raw bar runs from oysters and scallop crudo to the Pearls of the Sea platter, and the Tomahawk Ribeye is the upgrade for milestone celebrations.
Cocktails start in the Pearl Lounge beside the DJ booth, and dinner moves into one of two jewelry-box-themed dining rooms, with a private dining room set between them for smaller groups. Social Hour runs Sunday through Thursday from 5pm to 7pm at the bar, and on Beauty Mondays ladies get complimentary champagne service in the Pawn Lounge after 8pm.
