CUT by Wolfgang Puck occupies a room at The Palazzo at The Venetian Resort, and it is the Las Vegas entry in a steakhouse brand that now runs from Beverly Hills to London, Singapore and Bahrain. The menu is built on Wolfgang Puck's stated philosophy for the format: the finest selections of beef, cooked simply, and presented with some theater.
That combination has made it one of the hardest dining reservations in the city, and unusually for a Strip steakhouse it draws locals as readily as visitors. Matt Hurley runs the kitchen as executive chef, with Rebecca Huff as general manager.
The room also takes groups at a scale most Strip restaurants cannot. The private dining room seats up to 56, or 60 for a reception; the lounge holds up to 100 standing; and a full buyout takes 160 seated or 300 for a reception, which makes it one of the more flexible large-party options at the north end of the Strip.
Service runs Sunday through Thursday from 5pm to 10pm and Friday and Saturday from 4pm to 11pm, with the bar keeping the same hours. Dress is business casual, and valet and self-parking are both available.
