CUT by Wolfgang Puck at Four Seasons Downtown · Restaurant · New York

Wolfgang Puck's first Manhattan restaurant, with its own door on Church Street.
CUT by Wolfgang Puck sits inside the Four Seasons Hotel New York Downtown on Church Street, and it was the chef's first restaurant in Manhattan. It keeps its own entrance off the street, so you walk in from Church Street rather than through a hotel lobby, and the crowd follows from that: finance tables at lunch, neighborhood regulars in the evening, hotel guests folded in around them.
The format is the one CUT runs worldwide. The menu is built on the finest selections of beef, cooked simply, with the cuts and their provenance doing the talking. Clay Castillo runs the kitchen as executive chef.
What makes the New York room different from the others on this list is how much of the day it covers. Breakfast runs from 7am, lunch from 11am, a bites menu bridges the afternoon from 3pm, and dinner starts at 5:30pm, so it works for a morning meeting and a late dinner in the same week.
This is the fourth CUT we carry, after Beverly Hills, London and Las Vegas.
