Modern Italian with daily housemade pasta at The Forum Shops at Caesars Palace
RPM Italian is set in The Forum Shops at Caesars Palace, and in the restaurant's own words it is modern in approach and Italian in spirit. Lunch and dinner are served every day from a contemporary, chef-driven menu of housemade pastas and dishes meant to be shared, from late morning through 10pm.
More than a dozen pastas are made by hand each day, anchored by the signature Mama DePandi's Bucatini Pomodoro with Genovese basil. Standouts range from tableside wagyu beef tartare with quail egg and black truffle to Maine lobster ravioli, spicy Dungeness crab squid ink spaghetti, black truffle chicken Vesuvio and a dry-aged bistecca fiorentina sliced for two to four. Dessert runs to tiramisu, bomboloni with limoncello curd and a five-layer carrot cake.
Weekdays open with a lunch prix fixe until 3pm, and happy hour at the bar carries the room toward dinner. The restaurant also hosts private parties, from birthdays and corporate dinners to bachelor and bachelorette celebrations. Reservations are taken on OpenTable.
