Sadelle's at Bellagio is the Las Vegas home of the brunch house founded in New York City in 2015, set beside Bellagio's Conservatory & Botanical Gardens at 3600 Las Vegas Boulevard South. It opened at the resort in January 2019 and now serves brunch all day, from early morning to mid-afternoon.
Designer Ken Fulk, who created the original SoHo restaurant, styled the Bellagio room as a grand cafe on an old European boulevard, taking his cue from Belle Epoque Paris, in colorful pastels across 10,000 square feet. Tables look out over the Conservatory, the restaurant sits next to Michael Mina, and a private dining room with Conservatory views holds up to 30 guests.
The Sadelle's Tower brings fish and bagels with tomato, cucumber and capers, and house salmon, smoked Scottish salmon and whitefish salad come with a choice of plain, everything, sesame or cinnamon raisin bagel. Eggs Benedict comes with house salmon or ham, the French toast is cut thick, and sticky buns, cheese blintzes and the Leo, with house salmon and caramelized onions, fill out the morning. From 11am the kitchen adds starters such as shrimp cocktail and tuna tartare, and the rest of the menu runs to matzo ball soup, chopped salads, triple-decker sandwiches and fried chicken with truffle honey. Caviar can be added to any dish.
Sadelle's opens at 6am Monday through Friday and at 7am on Saturday and Sunday, and closes at 3pm every day. Groups of 10 to 18 can book a set group menu in advance.
