A. Wong is Andrew Wong's modern Chinese restaurant on Wilton Road in Victoria, holding two Michelin stars for its cooking. Wong describes himself as a chef, anthropologist and cultural observer: British-born of Chinese heritage, he melds traditional dishes passed down through his family with years of research into historic Chinese recipes and technique, drawing on both Chinese and British ingredients to cover the cooking of China's 14 international borders. He took over the restaurant in 2012 from his parents.
The headline format is the Collections of China, a multi-course dinner banquet spanning dim sum, fish courses, snacks and five-flavor dishes, with dishes such as Anhui province red braised fermented wild sea bass and garlic steamed wild tiger prawn; a vegetarian version of the same menu is also offered. At lunch, the Dim Sum Degustation menu has included chilled smacked cucumber with trout roe and a vegetarian take on memories of Peking duck, with a wine flight built around Dom Perignon.
The Forbidden City Bar pours a list of classic and original cocktails and takes guests without a dinner reservation, backed by a small bar-bite menu. The kitchen does not run a separate children's menu, and asks that young guests share the same menu as the table.
Current hours are dinner only on Tuesday, 5:30 PM to 10:30 PM, then lunch and dinner Wednesday to Saturday, 12:00 PM to 2:30 PM and 5:30 PM to 10:30 PM, closed Sunday and Monday.
