Heston Blumenthal's concept, opened in 2011, runs on a deceptively simple idea: every dish carries a date, drawn from British culinary manuscripts stretching back to the 1300s and reinterpreted with the modernist technique he made famous at The Fat Duck. The signature is Meat Fruit (c.1500), a chicken-liver and foie gras parfait shaped and colored to look like a mandarin orange, wrapped in a thin mandarin jelly and served with grilled sourdough. Other standouts include Powdered Duck Breast (c.1670) with fennel and smoked anchovy, Tipsy Cake with spit-roasted pineapple, and the Hereford ribeye with the triple-cooked chips Blumenthal pioneered.
The format is a la carte at lunch and dinner with a seasonal tasting menu. The open kitchen at the far end of the room, glass-walled spit roast included, is part of the theater, as is the hand-built mechanical clock overhead.
The room serves Monday, Wednesday, and Thursday, 12:00 PM to 2:00 PM and 6:00 PM to 9:00 PM, and Friday to Sunday, 12:00 PM to 2:30 PM and 6:00 PM to 9:30 PM; it is closed Tuesday. Dress is smart casual and not strictly enforced: skip flip-flops and shorts, though sneakers and t-shirts are fine.
