Enrique Olvera's two Michelin star Polanco landmark
Pujol is chef Enrique Olvera's flagship restaurant in Polanco and one of the restaurants most responsible for the modern Mexican fine dining movement. Since 2017 it has occupied a converted 1950s house on Tennyson, a low building of raw concrete, pale wood and courtyard trees where the dining room opens onto planted patios. It holds two Michelin stars in the current Mexico guide.
The kitchen serves a multi course seasonal tasting menu built around Mexican ingredients and technique, rewritten as the seasons change. The constant is Mole Madre, a mole that has been fed and aged for years and is plated against a fresher mole and eaten with tortillas, a dish the Michelin Guide itself has singled out as one of the defining plates in Mexican cooking today. A separate counter runs its own taco omakase tasting alongside the main dining room.
The room is quiet, not showy, with pale walls, linen and a view onto a planted patio, and a floor team that explains without lecturing. It is one of the calmer dining rooms among the city's top tables, built around the food more than around a scene.
