Operated by the Annie Famose Group, NOTO runs seasonally from late March through early October, opening at noon for lunch and extending to 3 a.m. for dinner service. Peak demand in St Tropez falls around late May through early September, with July and August at peak, sharpest on Pampelonne Beach season, Les Voiles de Saint-Tropez regatta — those are the dates the reservation book closes furthest out.
