Operated by the Annie Famose Group, NOTO runs seasonally from late March through early October, opening at noon for lunch and extending to 3 a.m. for dinner service. After dark, live musicians and DJs shift the energy toward late-night festivity—the space becomes a hybrid dining-and-nightlife venue where tables near the dance floor stay animated until closing. On the dress side: Elegant and chic; dress stylishly to match the vibrant Saint-Tropez crowd. Peak demand in St Tropez falls around late May through early September, with July and August at peak, sharpest on Pampelonne Beach season, Les Voiles de Saint-Tropez regatta — those are the dates the reservation book closes furthest out.
