Italian harvest cooking on the 33rd floor of Aman Tokyo, led by Venice-trained chef Masakazu Hiraki
Arva is the Italian restaurant of Aman Tokyo, on the 33rd floor of Otemachi Tower in Otemachi, where the hotel occupies the top floors. The name comes from the Latin for arable or cultivated, and the kitchen works in the spirit of cucina del raccolto, Italy's harvest cooking: simple, classic dishes built on whatever the season brings.
The dining room sits high above the Otemachi district with a panoramic view of the city skyline. Chef Masakazu Hiraki, now Aman's Director of Western Cuisine in Japan, spent 17 years cooking in Italy, 13 of them in Venice as an executive chef, and helped shape the Arva concept from the start. He sources through long relationships with farmers, fishermen and market traders.
The signature is Raccolta, a sharing course for two or more guests built around one main dish chosen for the table. Sharing plates include bistecca alla fiorentina, a one-kilogram kuroge wagyu T-bone; cotoletta alla Milanese; fritto misto; and acqua pazza with the catch of the day. Pastas use Pastificio Setaro spaghetti, with sea urchin and Mie tuna bottarga or as a carbonara with house-cured guanciale of Okinawa Kibimaru pork, and the kitchen also serves a Japanese caviar produced exclusively for Aman Tokyo.
Arva serves lunch from 11:30am with last orders at 2pm, and dinner from 5:30pm, with last orders at 8pm for course menus and 9pm for a la carte. Hotel guests and non-residents are welcome, and a window table is guaranteed with the course plans sold with one.
