Chef's Table crowns the 61st floor of lebua at State Tower in Bang Rak, one of Bangkok's most rarefied bookings and a two-Michelin-star contemporary French restaurant. It has held two Michelin stars since 2020 under executive chef Vincent Thierry, a native of France's Loire Valley.
The design lives up to the name: all 16 seats sit around the open kitchen, so every guest has an unobstructed view of Thierry and his team at work. Each course becomes a piece of theater, plated in front of the room against sky-high windows that look out over Bang Rak and the Chao Phraya far below.
The kitchen builds its tasting menu around confirmed signatures: a bluefin tuna tart, Atlantic scallop with Jerusalem artichoke and Perigord black truffle, and a Normandy sole fillet with truffle, leek and brown butter emulsion. This is precise, sophisticated modern French cooking staged as a performance.
It is a definitive special-occasion table, and unusually for a starred Bangkok room, it takes online reservations. Book well ahead, dress for the occasion, and settle in for a long evening watching the kitchen work at the top of the tower.
