Ms. Maria & Mr. Singh is Gaggan Anand's high-energy second concept, on the second floor of his flagship Gaggan Anand restaurant on Sukhumvit 31, opened in 2020 and built on a playful fiction: a love story between the Mexican Ms. Maria and the Indian Mr. Singh, a nod to Anand and his own Mexican wife. The result is a maximalist mash-up of Mexican and Indian flavors served in a loud, colorful room.
The space is deliberately the opposite of a hushed tasting-menu shrine - bright, busy and made for a good time, with the volume up and the plates flying. It carries Anand's irreverent signature without the ceremony of his flagship.
The kitchen sends out bold, richly spiced dishes designed to be shared, including papdi chaat served on a mini taco shell and shredded pork vindaloo tacos. The food is as fun as it is accomplished, mixing two cuisines that turn out to have far more in common than expected.
