Chef Prin Polsuk's one-Michelin-star restaurant near Saladaeng and Silom, built on culinary research
Samrub Samrub Thai is chef Prin Polsuk's one-Michelin-star restaurant near Saladaeng and Silom, a table built entirely on culinary research. Ranked number 47 on Asia's 50 Best Restaurants in 2025, it grew from a roving pop-up into a permanent home for one of the most studious minds in Thai cooking, where the menu functions almost as an edible archive.
Polsuk came up through the Mandarin Oriental's Sala Rim Naam before joining David Thompson at Nahm in London - the first Thai restaurant in the world to earn a Michelin star - and later leading the kitchen at Nahm Bangkok. That grounding shows in an encyclopedic command of regional and historical Thai recipes, drawn from visits to village markets on the borders of the provinces to gather foods, ingredients and local knowledge before they disappear.
The format is a set tasting menu that revives dishes from across the country and across the centuries, treated with scholarly care instead of modern reinvention. Flavors are bold and precisely balanced, rooted in provenance and tradition, and the cooking foregrounds ingredients and techniques that rarely make it onto other menus.
The room is intimate and the seating limited, so this is a book-ahead occasion, not a walk-in. Come curious and ready to be guided through the courses; it is one of the most intellectually serious Thai tables in the city.
