Sartoria occupies the 56th floor of the EA Rooftop at The Empire, the largest and highest lifestyle rooftop destination in Bangkok, reachable straight from Chong Nonsi BTS. Opened in 2024, it is the city project of Paulo Airaudo - a chef who has amassed six Michelin stars across a global group - and it pairs one of the coolest open kitchens in town with some of the best high-floor views. The name nods to the first tailor of Florence and the Tuscan tradition of suit-making, and the design carries that idea of precision and craft up into the clouds, all sharp lines and city panorama. The open kitchen puts the cooking on show against the skyline.
The food follows the tailoring metaphor: contemporary Italian cut with knife-edge precision, working the finest seasonal Thai and Japanese produce - pristine fish and seafood included - into a tapestry of Italian tastes and textures. It is sharp, modern and confident, not rustic.
