Chef Masato Shimizu opened Sushi Masato after building his name in Tokyo and New York, where at 29 he became the youngest chef to win a Michelin star at Jewel Bako and later held a star at 15 East. In Bangkok, Sushi Masato held a Michelin star starting in 2021; the current 2026 Thailand guide lists it without a star, alongside a handful of other Bangkok sushi counters that do carry one.
The restaurant is tucked down Soi Sawasdee 1, a quiet lane just off Sukhumvit 31, easy to miss unless you know to turn in. Inside, intimate sushi counters spread across the building's floors set the stage for a hushed, focused meal.
The experience is pure Edomae. Shimizu and his team shape seasonal fish sourced from Tokyo's market into a precise, unhurried nigiri progression, each piece served at its moment. There is no menu to choose from - you sit, and the counter leads.
It remains one of the harder tables to book in Bangkok's sushi scene. Reservations open three months ahead, released on the 15th of each month at midnight; book as soon as the window opens, arrive on time, and let the omakase unfold at its own pace.
