LAVO Italian Restaurant sits in The Palazzo tower at The Venetian Resort Las Vegas, serving modern Italian food in a room that takes its design cues from the bath houses of Southern Italy. The space brings together a lounge, a dining room and an outdoor terrace overlooking the Strip, and dinner runs nightly from 4pm to 10pm.
Start with The Meatball, a full pound of imperial wagyu, Italian sausage and veal, served with marinara and fresh whipped ricotta. Beef carpaccio comes with black truffle and arugula, pizzas come out of the brick oven, and the pasta list runs from bucatini carbonara to spaghetti and meatballs. For a table that wants a centerpiece, the dry-aged tomahawk ribeye is finished tableside. Sunday through Thursday from 8pm to 10pm, Social Hour runs at the bar and lounge.
Weekends start earlier. Endless Brunch runs Saturday and Sunday from 10am to 2pm, with an endless a la carte menu and the terrace in the sun. From October through March, Saturdays turn into LAVO Party Brunch, when the dining room and terrace fill with a live DJ, bottle service and dancing that runs long past the reservation.
