Michelin-starred seasonal tasting menu shaped by Arizona, on Clinton Street in the Lower East Side
Sixty Three Clinton opened in July 2021 at 63 Clinton Street on the Lower East Side, the first restaurant from chef Sam Clonts and co-owner Raymond Trinh. The two met in Arizona while Clonts was still in high school, worked side by side at Chef's Table at Brooklyn Fare, and then at Bar Uchu, which earned a Michelin star under Clonts in 2017. Sixty Three Clinton now holds one Michelin star of its own.
Dinner is a seasonal tasting menu at $130, rooted in the pair's upbringing in southeastern Arizona: Sonoran flavors, whole-animal butchery and regional ingredients. The Summer 2026 menu opens with a baby corn fritter with ora king salmon and the Breakfast Taco with ajitama, hash brown and smoked trout roe, then moves through pao de queijo with a sourdough tortilla, a tomato tortilla soup, and beef three ways with cowboy caviar and a corn and lime leaf sabayon, finishing with soy milk caramel and a Choco Taco. A Caviar Handroll is a $55 add-on.
The wine list, overseen by wine director Bobby Chui, goes deep on Champagne, organized by region, with Burgundy and spirits behind it. The Michelin inspectors point to an understated room with warm, knowledgeable service.
Dinner runs Tuesday to Saturday, 6:00 PM to 11:00 PM. Vegetarians are welcome if they eat eggs and dairy, but the kitchen cannot accommodate vegan diners or egg, coconut, soybean or severe allium allergies. Reservations run through Resy.
