Yoshino is a ten-seat hinoki counter on the Bowery, one of the most decorated Edomae sushi rooms in the country: a Michelin star, four stars from the New York Times, and the top spot on Opinionated About Dining's North America list. The counter is a single length of Kiso District hinoki cypress well over three hundred years old, the same wood used in the halls of Tokyo's Imperial Palace and cured for decades before installation. The room is a deliberate act of craft: green earthen-plaster walls by one of Japan's top plasterers, a coffered Kiso-cypress ceiling, kumiko doors joined without a single piece of hardware, and handmade chairs from the Hida Takayama region.
