The counter is Kiso District hinoki cypress well over three hundred years old, cured for 50 years after it was cut, and wood from the same tree appears in the halls of Tokyo's Imperial Palace. The room is a deliberate act of craft: green earthen-plaster walls and the artwork behind the counter by plasterer Shuhei Hasado, a coffered gotenjo ceiling in Kiso cypress, kumiko doors joined without a single piece of hardware, and handmade chairs from the Hida Takayama region.
Chef Yoshida apprenticed in Tokyo for eight years, then ran his father's sushi restaurant in Seki for 18 years before moving it to Nagoya, where it operated until the end of 2018. He brought Yoshino to the Bowery in 2021, and the counter earned its first Michelin star the following year. The omakase pairs a run of cooked dishes with carefully sourced sushi.
Seatings are at 5:30 PM and 8:30 PM, Monday through Saturday, closed Sunday, with extra closure dates posted on the restaurant's site. Dress is business casual, with no hats, shorts, or beach shoes, and guests must be 16 or older. Vegetarian, gluten-free and no-rice requests and soy allergies cannot be accommodated. Reservations run through Tock, released daily at noon Eastern on a rolling 30-day window.
