Contemporary French cooking on the top floor of Four Seasons Hotel Tokyo at Otemachi
est is the French restaurant of Four Seasons Hotel Tokyo at Otemachi, set on the hotel's top floor, the 39th floor of the Otemachi One tower beside the Imperial Palace gardens. Chef de Cuisine Guillaume Bracaval cooks contemporary French food from Japanese produce, and the restaurant holds one MICHELIN Star in the MICHELIN Guide Tokyo 2026.
The hotel describes the room as Japanese materials with French detailing, arranged around a live open kitchen, with a terrace off the dining room and a wide view over the city. A private dining room seats up to eight, and a semi-private room takes up to ten.
The kitchen sources 95 percent of its ingredients from independent farmers, fishermen and foragers across Japan. Dinner is a set of tasting menus: Terroir in eight courses, est in nine, a caviar menu and a vegetable course. A recent Terroir menu ran from scallops with nashi pear and buckwheat to amadai with pumpkin and fig leaf, beef with Okinawa long pepper and celery, and a muscat, miso and jasmine dessert from Pastry Chef Michele Abbatemarco.
Lunch starts at noon with last course orders at 1:30 pm, and dinner starts at 6:00 pm with last course orders at 8:00 pm, Thursday through Tuesday. The restaurant is closed on Wednesdays. The dress code is smart casual, and jackets with collared shirts are preferred for men.
