Shinobu Namae's Nishiazabu restaurant, serving one chef's omakase menu built on named producers
L'Effervescence is chef Shinobu Namae's restaurant at 2-26-4 Nishiazabu, Minato-ku, open since 2010 and holding three MICHELIN stars in the MICHELIN Guide Tokyo 2026. Before opening it, the Yokohama-born Namae worked at Michel Bras Toya Japon, where he became sous chef, and at The Fat Duck in Bray, England.
The restaurant describes itself as a hermitage in the city, a place to step away from the bustle and feel the blessings of the forest and the ocean. The dining room seats 40, and a separate private dining room is where families with younger children are seated.
There is one chef's omakase menu, served at lunch and dinner, built around the farmers and producers the restaurant names as its artisans, from Noheji turnips grown in Aomori to Rishiri kombu and Tokachi Mangalica pork from Hokkaido. The MICHELIN Guide describes the meal through the idea of ichiza-konryu, the bond between chefs, staff, guests and producers: a steaming risotto inspired by the freshly cooked rice of chakaiseki, the signature Artisanal Vegetables as a tribute to farmers, and a bowl of thin matcha in the manner of the Sowa tea ceremony to close.
Lunch begins at 11:30 with last orders at 12:30, and dinner at 18:00 with last orders at 20:00, Tuesday to Saturday; the restaurant closes on Sundays and Mondays. Gentlemen are asked to wear a jacket or a collared shirt, and all guests are asked to skip perfume and cologne so the aromas of the food and wine come through.
