Virgilio Martinez's Tokyo restaurant, two MICHELIN stars in the MICHELIN Guide Tokyo 2026.
MAZ is the Tokyo restaurant of Virgilio Martinez, chef and director of Central in Peru, created with his research organization Mater on the 3rd floor of Tokyo Garden Terrace Kioicho. It holds two MICHELIN stars in the MICHELIN Guide Tokyo 2026 and placed No. 28 in Asia's 50 Best Restaurants 2026. The cooking carries Peruvian ideas of biodiversity and landscape into Japanese ingredients, under Mater's motto Afuera hay mas, there is more outside.
The dining room is small, with 20 seats, and sits a one-minute walk from Exit D of Akasaka-mitsuke Station, with a direct connection from Exit 9a of Nagatacho Station. Yuya Nakamura became head chef in April 2026, with Carla Ferreira as head of hospitality and culture.
The tasting menu, Vertical Gaze, moves through nine altitudes, a way of reading landscape by elevation that began high in the Andes. Vegetable Vertical Gaze follows the same nine altitudes with no seafood or meat. The MAZ Masters Pairing is built on South American wines, and Experience and Senses is a non-alcoholic pairing of infusions and extracts.
Dinner starts at 5 pm on weekdays, and weekends add a lunch sitting from noon, with closing days set irregularly. Seats are released monthly at noon Japan time, tables are held for about two and a half hours, the dress code is smart casual with no strong perfume, and children are welcome from age 12.
