Shuzo Kishida's French menu carte blanche at Garden City Shinagawa Gotenyama in Kitashinagawa.
Quintessence is Shuzo Kishida's French restaurant on the ground floor of Garden City Shinagawa Gotenyama in Kitashinagawa, Shinagawa. It holds three MICHELIN stars in the MICHELIN Guide Tokyo 2026. Kishida opened it in 2006 after serving as sous-chef at L'Astrance in Paris under Pascal Barbot, and moved the restaurant to its current Gotenyama address in August 2014.
The dining room is built mainly from deep bronze-colored copper and red-brown rosewood, with chairs and banquettes upholstered in two Italian leathers, among them a dark brown washed horse leather. The private rooms are lined in silk in sand beige and off-white. Guests are asked not to take photographs in the main dining room.
The kitchen serves one menu carte blanche of 12 dishes, four of them desserts, built each day from fresh market produce, and staff ask for the date of a previous visit so that dishes are not repeated. Kishida's cooking rests on three processes: respect for the product, control of the cuisson, and precise seasoning, with a touch of humor on the plate. Meat is roasted at low temperature over a long time. The cellar holds about 600 wines, chosen mainly from France.
Dinner is served Tuesday to Saturday from 5:00 pm, with last orders at 8:30 pm, and the restaurant also closes for a summer break and over the New Year. Seats open three months ahead on the same calendar date. Guests must be 16 or older, and the house asks for elegant casual dress, with jackets preferred for men.
Address: Garden City Shinagawa Gotenyama 1F, 6-7-29 Kitashinagawa, Shinagawa-ku, Tokyo 141-0001, Tokyo
