A 13-seat copper counter cooking over binchotan charcoal on the third floor of the Janu Tokyo annex.
Sumi is the charcoal-grill counter of Janu Tokyo, on the third floor of the hotel's annex at Azabudai Hills in Minato. The name comes from sumibiyaki, cooking over a charcoal fire, and the kitchen uses Japanese binchotan as both heat and seasoning. Chef de cuisine Hisaki Otsuka runs the room.
Thirteen seats line a copper counter facing the grill, with a small number of tables beside it, and the windows look out to Tokyo Tower and the Azabudai skyline. The counter serves the Tomoshibi omakase. The tables serve Tsudoi, an omakase for sharing built around a tiered box of seasonal appetizers, charcoal-grilled Kuroge wagyu, pot-cooked rice and desserts.
The Tomoshibi menu follows the season around a few fixed points. Midway through the meal the head chef serves handmade soba in a fragrant broth, and the rice course is a pot-cooked rice that changes each month and is finished over glowing charcoal for a toasty aroma. Kuroge wagyu and seasonal fish go over the binchotan in between. Pairings cover wine, premium sake and a non-alcoholic flight that includes a house alcohol-free gin and tonic built on seasonal botanicals.
Dinner is served nightly from 5:30pm. Counter guests are seated at 6pm or 8:30pm, and the Tsudoi tables take their last start at 8:30pm.
