Haoma, on Sukhumvit 31, is chef Deepanker "DK" Khosla's one-Michelin-star, Green-Star restaurant built around a zero-waste urban farm. It was the first restaurant in Bangkok to earn a Michelin Green Star and, remarkably, remains the only Indian restaurant in the world to hold both a Michelin Star and a Green Star at once - a distinction that frames everything it does.
The site runs as a closed loop, not a conventional kitchen with a garden attached. A regenerative urban farm, rainwater harvesting, in-house composting and rain-fed fish ponds feed the restaurant directly, so a meaningful share of what reaches the plate is grown, caught or reclaimed on site. The setting is lush and green, a working ecosystem as much as a dining room.
Khosla calls the cooking neo-Indian, drawing on his travels across India and his hometown of Allahabad. The menu is a personal, progressive procession - deeply Indian in soul but unbound by any single regional template.
