NAWA holds a Michelin star for its hyper-modern take on central Thai cooking, led by chefs Napol 'Joe' Jantraget and Saki Hoshino at Parklane on Sukhumvit 61, near Ekkamai. The current tasting menu shows the range. Ma Hor arrives with fermented pineapple; a Phetchaburi oyster omelette comes with egg foam and sago; and grilled river prawn is finished with a prawn tomalley relish. Each dish is recognizably Thai but reassembled with modern intent.
