SW Steakhouse opened with Wynn Las Vegas in 2005 and remains the resort's flagship restaurant. A spiral escalator beside Overlook Lounge leads to the dining room and outdoor terrace on the Lake of Dreams, next to PISCES Bar & Seafare and Bar Parasol. At night the lake becomes an outdoor theater of puppetry, music and light; outdoor tables can be requested but are not guaranteed.
Executive chef Mark LoRusso, who took over in 2021, builds the menu around USDA Prime steaks, wet-aged or dry-aged in-house, including a 45-day dry-aged porterhouse for two and a 48-ounce tomahawk. The Japanese A5 Wagyu includes Yonezawa Gyu Oguni beef from Yamagata Prefecture, offered exclusively at Wynn Las Vegas, and Hokkaido Snow Beef.
Beyond beef there are diver sea scallops, butter-poached Maine lobster and a vegan wild mushroom Wellington, with sides such as street corn brulee and white cheddar, fontina and Gruyere mac and cheese. The 77-page wine list focuses on Bordeaux and California, and the Luxury Old Fashioned is made with Knob Creek Wynn Barrel Select rye.
Dinner runs 5:30 to 10 p.m. Sunday through Thursday and until 10:30 p.m. Friday and Saturday. Dress is upscale casual chic, with collared shirts recommended, and children under 5 are not permitted.
