Michelin-star Spanish fire cooking on Heddon Street, Mayfair
Sabor is Nieves Barragan Mohacho's Spanish restaurant on Heddon Street, just off Regent Street in Mayfair. Barragan Mohacho, formerly of Barrafina, opened it in 2018, and it has held a Michelin star ever since, built around fire, seafood, and the regional cooking of Spain rather than a set tasting-menu formula.
It is really two experiences under one roof. The ground floor holds the walk-in Counter and Bar, where an in-house fishmonger and an open kitchen turn out tapas from across Spain. This is the buzzy, first-come-first-served part of the building, and it cannot be reserved. Upstairs is El Asador, the only area that takes bookings: a warmer, more deliberate room set around a wood-fired grill, with pale exposed brick, caramel woods, Sevillian tiles, and green leather banquettes.
