Michelin-star Spanish fire cooking on Heddon Street, Mayfair
Sabor is Nieves Barragan Mohacho's Spanish restaurant on Heddon Street, just off Regent Street in Mayfair. Barragan Mohacho, formerly of Barrafina, opened it in 2018, and it has held a Michelin star ever since. The kitchen is built around fire, seafood, and the regional cooking of Spain.
It is really two experiences under one roof. The ground floor holds the Counter, La Mesa, and the Bar, where an in-house fishmonger and an open kitchen turn out tapas from across Spain; the Counter and La Mesa can be reserved, while the Bar itself is walk-in only. Upstairs is El Asador, a warmer, more deliberate room set around a wood-fired grill, with pale exposed brick, caramel woods, Sevillian tiles, and green leather banquettes.
El Asador takes its name from the asador grilling tradition of Castile and Galicia, and two dishes anchor it. The Segovian suckling pig is roasted whole in a purpose-built oven and carved with the edge of a plate at the table. The Galician octopus, pulpo cooked in vast copper pans and dusted with paprika, is the other must-order. Around them come grilled seasonal vegetables, cured meats, a seafood rice, and fresh fish from the counter downstairs, with a Spanish-focused wine list built for the grill.
Reservations for El Asador, La Mesa, and the Counter take up to ten guests; the walk-in Bar fills as people arrive, so come early for those seats. The room runs dinner only on Monday, 5:30 to 10:30 PM, then lunch and dinner Tuesday through Saturday, noon to 2:30 PM and 5:30 to 10:30 PM, and closes on Sunday.
