Rezdora is an Emilia-Romagna pasta restaurant in the Flatiron, at 27 East 20th Street. Chef Stefano Secchi opened it with partner David Switzer in 2019, after learning his craft in Modena, including under Massimo Bottura at Osteria Francescana and at Hosteria Giusti. It holds one Michelin star, and it is a dinner worth building an evening around.
The name translates to head of household, usually the nonna who rolls the pasta by hand, and the menu is built around exactly that idea. House-made pasta comes first, with traditionally prepared meat, fish, local vegetables and Northern Italian wines in support.
The regional pasta tasting is the marquee move, offered only at dinner with a vegetarian version alongside it; the whole table takes part, and it runs about two hours. From the current menu, look for the gramigna with slow-braised sausage ragu in bianco, the anolini di Parma in Parmigiano sauce, the green cappelletti with roasted leeks, and the uovo raviolo. Gnocco fritto with prosciutto di Parma and mortadella is the opener, and dessert stays regional with torta d'oliva and a tiramisu.
Lunch runs Tuesday to Friday, brunch on Saturday and Sunday, and dinner every night from 5:00 PM. Dress is relaxed. Reservations open 30 days in advance at midnight Eastern, online bookings cover parties of up to four, and groups of six or more are handled as private dining.
