The defining feature is the pastificio: a glass-walled pasta factory visible from the dining room throughout the meal. All pasta is made fresh daily with flour and water, no eggs, the way Roman tradition demands. The result is a texture with more resistance than the egg-based pasta most American diners know, closer to what you get in a family-run trattoria
