Lionfish opened in 2017 as the seafood restaurant inside Pendry San Diego, at 435 Fifth Avenue in the Gaslamp Quarter. Chef JoJo Ruiz, a James Beard Smart Catch Leader, built it around sustainability and local seafood, and that focus shows across a menu that runs from clean-lined raw fish to unabashed luxury.
The Black Cod Marinated in Miso comes tender and sweet-savory, while the Bonecrusha Roll layers king crab, tuna toro, caviar, and bone marrow butter for a full-throttle indulgence. The kitchen also pivots to unexpected territory: Truffle Fried Chicken & Waffles with mochi waffles and smoked maple syrup, or the bold Geisha Roll with kampachi and spicy tuna. Chocolate Fondant closes things out richly.
