Water Grill claims prime real estate at 615 J Street in the Gaslamp Quarter, steps from Petco Park and the Convention Center, and it treats freshness as non-negotiable. Opened in 2015, the two-story restaurant runs on a menu that changes daily, built around live saltwater tanks and an open kitchen.
The raw bar reads straight off the ocean, with East and West Coast oysters by the piece, Wild Dungeness Crab from Washington, and Farmed Peruvian Bay Scallops with pistachio and citrus pesto. Do not skip the Peruvian scallops. The Honeymoon Oyster, freshly shucked and topped with uni roe, tobiko, ikura and quail egg, is a one-bite starter. Live Santa Barbara spot prawns are charcoal grilled in the Josper oven, and wild Alaskan black cod, Chilean sea bass and live hard shell lobster fill out the rest of the list.
Upstairs, reclaimed wood floors and windows overlook the Gaslamp, and private dining rooms handle groups from 10 to 120. Most meals close on key lime pie or caramel bread pudding with alaea red sea salt. Hours run Sunday through Thursday from 11:30 AM to 10:00 PM and Friday to Saturday from 11:30 AM to 11:00 PM, with smart casual dress.
Reservations are recommended, though walk-ins are welcomed whenever possible.
