Nobu Matsuhisa's Japanese-Peruvian fusion in the Gaslamp Quarter
Nobu San Diego sits in the Gaslamp Quarter inside the Hard Rock Hotel at 207 Fifth Avenue, across from the convention center, and it cooks in the style Chef Nobu Matsuhisa made famous: traditional Japanese cuisine blended with Peruvian ingredients.
The Black Cod Miso is the dish to understand it by: a filet marinated in Den miso for a few days, baked, then finished under the broiler. Pair it with the Yellowtail Jalapeno, thin slices of yellowtail with garlic puree, jalapeno and cilantro in a Japanese citrus soy sauce, and the whole approach comes into focus.
The menu runs well past the signatures. Crispy Rice Spicy Tuna arrives six pieces to an order and makes the right opener; Rock Shrimp Tempura tossed in creamy spicy sauce follows naturally. The Toro Tartare with Caviar is the splurge, and Japanese A5 Wagyu from Miyazaki is served by the ounce. The Nobu Premium tasting menu at $200 per person is the cleanest path for a group that wants the kitchen to lead.
The Rockwell Group designed the room around an onyx sushi bar, with fish basket pendant lights hanging overhead. Tanoshi Hour runs daily from 5:30 to 6:30 PM with Nobu signature cocktails and bar bites, and the dining room serves nightly from 5:30 to 9:30 PM. A limited number of walk-ins are accepted. A second Nobu opened at Hotel del Coronado in May 2025; this is the original Gaslamp location at the Hard Rock, a short walk from Petco Park.
