Matsuhisa's desert icon, then the night out
Nobu Scottsdale brought chef Nobu Matsuhisa's globe-spanning Japanese-Peruvian empire to the desert in January 2025, landing with the polish you would expect from one of the most recognizable names in fine dining. The restaurant anchors the new luxury wing at Scottsdale Fashion Square, a 237-seat, 10,635-square-foot room designed by Studio PCH in a warm, minimalist language of earthy materials, sculptural wood, and desert-toned finishes. It reads calm and confident rather than loud, a Zen-leaning space that lets the food and the crowd do the talking. This is Nobu's first Arizona location, set in Old Town Scottsdale within walking distance of the Entertainment District bars and clubs.
The kitchen runs the signature Nobu playbook that made the brand famous, a fusion of classic Japanese tech
