Matsuhisa's desert icon, then the night out in Old Town Scottsdale
Nobu Scottsdale brought chef Nobu Matsuhisa's Japanese-Peruvian empire to the desert in January 2020, landing with the polish of one of the most recognizable names in fine dining. The restaurant anchors the luxury wing at Scottsdale Fashion Square, a 237-seat, 10,635-square-foot room designed by Studio PCH in a warm, minimalist language of earthy materials, sculptural wood, and desert-toned finishes. It reads calm and confident, a Zen-leaning space that lets the food and the crowd do the talking. This is Nobu's first Arizona location, within walking distance of the Old Town Scottsdale Entertainment District.
The kitchen runs the signature Nobu playbook, a fusion of classic Japanese technique with Peruvian and South American accents. Start with the Yellowtail Sashimi with Jalapeno, thin slices brightened by garlic puree, cilantro, and yuzu soy, then move to the Black Cod Miso, marinated in the sweet Den miso the restaurant is known for and baked until it flakes apart. The Rock Shrimp Tempura in creamy spicy sauce is a table staple, and the sushi and sashimi selection runs deep. For the full treatment, the seasonal omakase and tasting menus walk through Nobu signatures alongside the kitchen's current creations.
The bar and lounge run an evolving list of original cocktails, and Tanoshi Hour pairs bar bites and sushi rolls with drinks, 5 to 6 pm most nights and 5 to 9 pm on Mondays. Friday through Sunday the kitchen also opens at midday, a rarer daylight look at the Nobu menu.
