Nobu Los Cabos is the namesake restaurant of Nobu Hotel Los Cabos, set inside the gated Diamante community on the Pacific edge of Cabo San Lucas. It belongs to Nobu Matsuhisa's global restaurant family, and it brings that pedigree to a beachfront resort facing the open ocean.
The cooking is unmistakably Nobu: Japanese technique crossed with Peruvian influences, here accented by Mexican touches and local produce. The menu carries the house classics that made the brand famous, among them black cod with miso, yellowtail jalapeno and rock shrimp tempura, alongside a full range of sushi, nigiri and sashimi and Japanese A5 wagyu from Kyushu served by the ounce.
The room is designed to blur the line between inside and out, with the dining room opening toward the Pacific, and service follows omotenashi, the Japanese spirit of hospitality. It is immersive without ever feeling fussy, and it works equally well for a milestone dinner or an easy, unhurried night out.
Dinner is served nightly, and the bar and lounge run from 5:00 PM to 11:00 PM.
