Nobu at Caesars Palace sits inside the Nobu Hotel and runs the menu that defined the Nobu name worldwide: yellowtail jalapeno, black cod with miso and new style sashimi. The yellowtail jalapeno comes as six slices of sashimi with garlic puree, jalapeno, cilantro and a Japanese citrus soy. The black cod is marinated in miso for a few days, baked and finished under the broiler.
Beyond the classics, the kitchen serves Japanese A5 wagyu by the ounce in styles from tataki to flambe, nigiri and sashimi by the piece, and omakase tasting menus that the whole table orders together, served until 9pm. The restaurant also has teppan tables, where a set teppanyaki menu is cooked course by course in front of the table and finishes with Miyazaki A5 wagyu and fried rice.
The stylish Nobu Lounge suits cocktails, dates and larger groups, with a lounge menu of dishes not served at other Nobu locations, available after the main dining room closes. Nobu stocks three rare sakes from the Hokusetsu brewery on Sado Island. Dinner starts at 5pm Sunday through Thursday and at 4:30pm on Friday and Saturday, and dress is business casual.
