Nobu Miami sits inside the Nobu Hotel at Eden Roc on Collins Avenue in Mid-Beach, a few steps back from the sand. The entrance is through the hotel rather than off the street - north side of the lobby - which is worth knowing on a first visit, and is part of why the room stays quieter than its address suggests.
The dining room is the Nobu design language done properly: timber throughout, woven lanterns, a long sushi counter along the back and banquettes worked around it. Beyond the main room there is a semi-private room behind cherry-blossom screens, a private chef's room built around a single table, and a patio - so a group of eight and a group of forty are both accommodated without either taking over the restaurant.
The cooking is the canon Nobu Matsuhisa built and has not needed to change: black cod marinated in miso, yellowtail sashimi cut over jalapeno, rock shrimp tempura. Ordering the signatures here is not the tourist move, it is the point. The Lobby Bar runs its own programme alongside, currently an oyster and caviar counter, and works as a first drink before the table or a last one after it.
Service runs evenings only, from six, to a quarter to ten Sunday through Thursday and a quarter to eleven on Friday and Saturday. Expect three figures a head before wine.
