Nobu Matsuhisa's Tokyo restaurant on the ground floor of Toranomon Tower Office, with the Nobu Bar
Nobu Tokyo is chef Nobu Matsuhisa's restaurant in the capital, on the ground floor of Toranomon Tower Office at 4-1-28 Toranomon, about six minutes on foot from exit 4B of Kamiyacho Station on the Hibiya Line. The kitchen cooks the Nobu canon: Japanese technique and seafood, with Peruvian touches such as anticucho skewers, tiradito and jalapeno.
The main dining room covers 190 square meters and seats more than 90, or 150 standing when the restaurant is hired whole. A private dining room handles smaller groups, and the restaurant invites guests to arrive early for an aperitif at the Nobu Bar, which pours cocktails, sake and wine with light bites.
For newcomers the chef suggests three or more of the menu's Eight Highlights, shared family style: two or three cold dishes, then two or three hot ones, then sushi and dessert. That means yellowtail sashimi with jalapeno, the rare-grilled tuna sashimi salad with Matsuhisa onion-soy dressing, rock shrimp tempura in creamy spicy sauce and black cod marinated for days in Den miso before it is baked and broiled. Dinner adds new style sashimi, the Toro Rossa broiled toro lettuce wrap and caviar and uni nori tacos, and the multi-course Chef Omakase Tasting is ordered until 9pm.
Lunch is served from 11:30am on weekdays and from noon at weekends and on holidays, with last seating at 1:45pm. Dinner runs daily from 6pm, with last seating at 9pm. The dress code is smart casual, and gentlemen are asked to wear covered shoes.
Address: Toranomon Tower Office 1F, 4-1-28 Toranomon, Minato-ku, Tokyo 105-0001, Tokyo
