George's at the Cove has overlooked La Jolla Cove from 1250 Prospect Street since 1984, with coastal views from all three levels. Guests dine on two of them, the rooftop Ocean Terrace and the covered, open-air Level2, while the lower level is given over to private events.
The kitchen works under the guidance of chef Trey Foshee, with executive chef Masa Kojima and pastry chef Anna Adams leading the team, and the menus are seasonal and built on local ingredients. At dinner that means Hokkaido scallop crudo with kiwi aguachile, jerk octopus with pickled pineapple and crispy plantain, Wild Isles salmon with pickled green tomato and tomato-horseradish sauce, and seared rare yellowtail with a togarashi crust and miso eggplant. George's Famous Soup, with smoked chicken, broccoli and black beans, appears at lunch and dinner.
The Ocean Terrace is the rooftop, entirely outdoors, looking over the cove and the Pacific. It closed in November 2025 for a remodel and reopened in February 2026 with a new foundation and flooring, a four-foot perimeter glass wall, redesigned umbrellas with integrated LED lighting and permanent heaters. Lunch brings rockfish tacos and a lobster roll with Meyer lemon creme fraiche.
One level down, Level2 was renovated in early 2025 and serves the same menu with a similar sweeping view, with adjustable wind screens for cooler evenings. Doors open at 11am daily, and premium seating reservations guarantee a table along the edge of the Ocean Terrace.
