Since opening in 2008, the East Village destination at 640 10th Avenue built by founders Jon and Angie Weber and Executive Chef and Partner Victor H. Jimenez has stayed independent, stayed focused, and stayed consistent. Jimenez trained at Le Cordon Bleu in Paris and has led the kitchen since day one. That continuity shows in the food.
What separates this room from a generic chophouse is the butchery program. Every steak is cut in-house each morning. The team dry-ages the Cattleman's Cut bone-in ribeye for 35 days to their own specification, a process that concentrates the beef flavor in a way that no wet-aged steak can replicate.
