Cowboy Star has been an East Village steakhouse at 640 10th Avenue since 2008, with chef Victor H. Jimenez in the kitchen from the start. San Diego Magazine has named it the city's Best Steakhouse every year from 2019 through 2025. An in-house butcher shop sells premium cuts for retail, a sign of how seriously this kitchen takes its beef.
The steaks are hand cut. The team dry-ages the 18-ounce Cattleman's Cut, a bone-in Double R Ranch ribeye, for 35 days to its own specification, and it sits near the top of the menu. For those who want to go further, the 6-ounce A5 Japanese Omi Gyu comes from Okaki Farm and Sawai Ranch, and the menu notes that in Southern California it is served only at Cowboy Star.
The beef list runs seven cuts, from an 8-ounce filet mignon and a 12-ounce grass-fed New York strip from Double R Ranch in Washington, both aged 21 days, to a 14-ounce ribeye from the same ranch and a 40-ounce Porterhouse for two. A Snake River Farms wagyu skirt steak rounds out the list, and all steaks and sauces are gluten-free. Beyond beef, the signature steak tartare is hand chopped to order, and the seafood follows the Monterey Bay Aquarium Seafood Watch standards.
The room leans into the name with exposed beam ceilings, cowboy accents and classic landscape photography around a display kitchen, a design that won a 2008 Orchid Award for Interior Design. The bar opens at 3pm on weekdays, with happy hour in the bar until 6pm.
