Trust is the Hillcrest neighborhood restaurant where Chef Brad Wise put wood-fired cooking at the center of the menu, and the flame still anchors the whole experience. The cooking follows one idea: bold flavors, cooked simply over an open flame, with wine and cocktails chosen to pair with each plate.
Wise came of age on the shores of Cape May, took a job mopping floors at a pizza shop, and fell for Santa Maria-style grilling on California's Central Coast. After serving as executive chef at JRDN and Belmont Park, he opened Trust in 2016 at 3752 Park Boulevard. It was his first restaurant, and the wood-fired style he built here now runs through Fort Oak, Rare Society and Cardellino as well.
The menu is built for sharing, organized around what the fire does best, bold without feeling heavy. The wood-grilled cauliflower comes with raisins, mint, serrano aioli, black lentils, cilantro and a curry vinaigrette. From there the kitchen opens up with hamachi crudo and aguachile blanco, char siu glazed brisket with white curry and chili garlic crunch, and wood-grilled octopus with castelvetrano olives and salsa verde. The Cedar River prime ribeye and the bacon chop reward a bigger appetite and a table that likes to pass plates.
Dinner starts at 5 PM every night except Tuesday, and brunch runs Saturday and Sunday from 9 AM to 2 PM. It works for a date or a group dinner where everyone shares.
