Cantonese cooking on the 28th floor of Conrad Tokyo, looking over Hama-Rikyu Gardens and Tokyo Bay
China Blue is the Cantonese restaurant on the 28th floor of Conrad Tokyo, at Higashi-Shimbashi in the Shiodome district. The restaurant describes its cooking as creative, refined Cantonese with bold presentation, an homage to Cantonese flavor built on Chinese tradition and locally sourced ingredients.
The dining room is finished in blue throughout, with a glass wine cellar about eight meters tall at its center, and the windows look straight out over Hama-Rikyu Gardens and Tokyo Bay. Three private rooms seat six to twelve: one with a panoramic bay view, a quieter enclosed room, and a round-table room with windows on two sides facing the bay area.
Head chef Chan Chi Wai, born in Hong Kong, came to Japan in 1995 and joined Conrad Tokyo in 2006, learning modern Chinese cooking under former head chef Albert Tse. Seafood is his specialty, and his own signature is a lobster white spring roll. The a la carte menu includes the China Blue Tokyo Duck, wrapped with dried tofu skin in a black sesame crepe, along with mapo tofu and a trio of dim sum. Dinner also runs as seven-course menus such as Kei, which currently includes Buddha Jumps Over the Wall soup and pan-seared wagyu with XO chili sauce.
Lunch is served daily from 12:00, last order 14:00, and dinner from 17:30, last order 21:00. Daytime tables catch the green of the gardens, while evening brings the lights of the bay. The published dress code is smart casual, and tank tops and beach sandals are not permitted.
